Happy First Day of Fall! Fall is officially the season of comfort food, so today we're sharing Monila's White Chicken Chili recipe. Enjoy!
🍂1 lb of Smart Chicken breast, cut into ½ inch chunks
🍂1 large yellow onion, peeled and diced
🍂1 carrot, peeled and diced
🍂2 yellow peppers, diced
🍂1 large yellow squash, sliced and quartered
🍂3 cups of chicken stock (we used Kitchen Basics Unsalted Broth)
🍂2 cans of white beans (we used Made With Organic Great Northern beans)
🍂1 tablespoon of cumin powder
🍂1 tablespoon of garlic powder
🍂1 tablespoon of onion powder
🍂1 teaspoon of dried oregano
🍂Salt & pepper to taste
🍂1/4 teaspoon of cayenne pepper (optional)
🍂Preferred garnishes (Cilantro, scallions, cheese, sour cream, etc!)
🍂In a large Dutch oven or heavy-bottomed pot, cook the chicken in a bit of olive oil. Cook until the outside is no longer translucent. The chicken doesn’t need to be cooked fully through as it will continue cooking in the chili. Remove from pot and reserve off to the side until later.
🍂Add some more olive oil to the pot, add the onion and carrot and cook on medium until the onions are soft and translucent (about 10 minutes). Add the peppers and cook for an additional 3 minutes.
🍂Add the cooked chicken, squash, beans, spices, cilantro, stock, salt & pepper. Bring the mixture to a boil and then reduce heat to low. Simmer uncovered for 15-20 minutes, until the vegetables are cooked and sauce has reduced.
🍂To thicken, I take 1-2 cups of the soup out, mash or puree it and add it back in (optional step!)
🍂Serve with preferred garnishes!...
